We arrived four deep at the Angelino hotel in Brentwood, Los Angeles ready to have a good time! We quickly made our way to the pool but the fashion show hadn&#8217;t started yet, so Cheyne thought it would be a good idea to roam around the hotel while we waited. We took a trip up the elevator&#8230;got off at the 16th floor.. and found ourselves walking into the board room of the hotel. There was a large table with a projector screen for board meetings and such&#8230;so we decided to have a meeting of our own&#8230;</span></span></p>

			<content:encoded><![CDATA[<p>Went to San Diego for a night to celebrate a birthday. Left around 12 and arrived  a couple hours later. Traffic + stopping to eat added an extra hour on the road. We arrived at the Hyatt in down town San Diego. The Hotel was nice; the lobby had super high ceilings which was really dope. Shorty after checking in we went up to the rooms&#8230;dropped ours bags&#8230;headed down to the pool. It wasn&#8217;t as hot as I thought it would be, but it was nice weather. Chilled by the pool&#8230;had a couple drinks&#8230;I had a Stella&#8230;GF had Vodka tonic&#8230;went back to the room to get ready for the birthday dinner. I realized I forgot my camera in the room once we were heading to the restaurant&#8230;lame! So I needed up taking pics with my iPhone&#8230;you probably saw them if you were following our face book or twitter. We ordered some drinks and ended up getting more food than we could handle. Hanging shrimp&#8230;Salmon&#8230;grilled chicken&#8230;fillet Mignon&#8230;.more drinks. Then&#8230;and everlasting  food coma&#8230;.</p>

<p><span style="font-family: arial,helvetica,sans-serif;">I already know what you’re thinking, so don’t send me an email asking me just yet. The secret all lies in the power of masking. If you take a series of photos of, for example, a freeway, there’s more than likely going to be places where the cars aren’t in the exact same spot.</span></p>
<p><span style="font-family: arial,helvetica,sans-serif;"><a rel="lightbox" href="http://rossching.com/images/runningonempty-bridge3.jpg"><img src="http://rossching.com/images/runningonempty-bridge3.jpg" alt="" width="400" height="267" align="middle" /></a></span></p>
<p><span style="font-family: arial,helvetica,sans-serif;">So if you layer 10 or so images over each other in Photoshop, you can edit out all the parts where the cars aren’t. It also helps to take the shot when traffic is really light. After that, you end up with a shot like this.</span></p>

<p><span style="font-family: comic sans ms,sans-serif;">Under &#8220;<strong><em>Unusual&#8221;.</em></strong><br />
 This is an appetizer consisting of fresh, warm dungeness crab with avocado salad, cream, warm chipotle mayo, served with rich mango sorbet. Going into this course, I had a preconceived notion that the sorbet&#8217;s sweetness would be odd and cloying. Yet the richness and tropical flavor of the sorbet added the perfect bit of acid and sweetness needed to balance out the rich, meatiness of the fresh dungness meat with avocado. Being a chef is all about balancing flavors, with the multitude of components. You had spicy- jalapeno, salty- avocado, crab shell, umami-(earth flavor) Crab meat &#8211; sweet and tart- mango sorbet. The sorbet had the slight touch needed to take a good, solid dish to the exceptional level.</span></p>

<p><span style="font-family: helvetica;"><em>PS- Ras el Hanout is a Moroccan spice mixture rumoured to contain a Spanish fly. For you Top Chef fans, remember when Richard used Ras el Hanout to smoke crabcakes in a plastic bag to win his round over a very good chef.</em></span></p>
<p><span style="font-family: helvetica;">This was a amazingly complex course, with a positively intriguing interaction between sweet and earth savory. I really appreciated the rich gameness of the earth flavors, the staple substantiation of the two kinds of shrimp, while the mint really helped uplift this very aggressively flavored dish. In fact, the whole amalgamation reminded myself of award-winning chili. What I liked about this dish, it had familiar flavors in the cumen and arabic spice blend but it was reworked in a new way as so to introduce me to a completely unique dish! Well done.</span></p>

<p><span style="font-family: helvetica;">Amazingly there are four types of pork in this tarte which resembles more of an upper crust NY pizza than a savory tart. We&#8217;re talking guanciale (unsmoked jowl bacon),speck (juniper-smoked ham), coppa (neck/shoulder Neapolitan-Italian cold cut (salume) made from pork shoulder or neck, and dry-cured whole),  and lardo (cured backfat). This cured meats come from La Quercia, one of the most renowned names in cured meats here in the US, so how could I resist this tart, made with no less than four types of pork?  The play on the hint of creamy burrata cheese, bitter rocket was enhanced and balanced by the soulful, savory, yet briny salume. The crust was divine, too.</span></p>

<p><span style="font-family: helvetica;">Foie gras with Torchon and pineapple- I truly enjoyed this dish although some people say other wise. The pineapple brings a lovely sense of tart, yet sweet tropical flavor that balances out the richness of the foie gras. Although some would opt for some more traditional food pairings, I tend to disagree.</span></p>

<p>One of the Cars was the Ferrari F430. T he Ferrari F430 was a sports car produced by the Italian automaker Ferrari from 2004 to 2009, as a successor to the 360. It debuted at the 2004 Paris Motor Show.  Its replacement, the Ferrari 458 Italia, was unveiled on 28 July 2009 and is expected to go on sale in Spring 2010</p>

<p>Joe Jackson couldn&#8217;t be happier. The man who famously plugged his record company on national TV only a day after his son died, stood next to the mayor of Gary, Indiana as he announced the city would build a $300M museum to honor Michael Jackson.  And no, they are not stopping there: along with the museum, the city is also planning a performing arts center, restaurants, hotels and more. Could you exploit the name of a deceased person anymore than that? jeez. Performing arts center, okay. Hotels? My guess is that an amusement part would be next.</p>
<p>But, Joe Jackson still needs to get clearance from the Jackson Family Foundation. Their lawyer announced that the foundation was already planning an honorary museum, particularly not one in Gary. The foundation also maintains the rights to MJ&#8217;s name and estate, for benefit of his children. Can&#8217;t wait to see what good old Joe has up his sleeve. Get rich or die tryin&#8217;.</p>
